秋分一过，天黑得一天比一天早，早上起来嗓子干得像砂纸，嘴唇起皮，连说话都有点哑。办公室里咳嗽声此起彼伏，皮肤紧绷得涂多少乳液都不管用。老一辈常说“秋分不养，一年白忙”，这时候吃东西可不能瞎对付，菜市场里那些水灵灵、粉糯糯的应季食材，才是老天爷给咱们准备好的“润燥神器”。今天就跟大家唠唠秋分最该吃的5种时令好物，价格不贵，做法简单，吃对了整个秋天都舒坦。
一、秋梨：行走的“汁水炸弹”，嗓子干就吃它
秋分前后去菜市场，一堆堆黄澄澄的梨堆得跟小山似的，看着就水润。俗话说“秋吃梨，燥不欺”，梨就是秋天最应季的水果，咬一口汁水顺着嘴角流，清甜得不得了。
生吃梨能清火，嗓子冒烟、干咳没痰的时候来一个特别管用。但梨性子偏凉，脾胃弱、容易拉肚子的朋友别生啃太多，炖熟了吃温和得多。我最推荐冰糖蒸梨——梨顶部切开当盖子，挖掉核，塞几粒冰糖和一小撮川贝粉（药店有卖），盖上盖子用牙签固定，上锅蒸20分钟。蒸出来的梨肉软烂，汤汁甜丝丝的，趁热连汤带肉吃下去，喉咙那种干痒的感觉立马缓解一大半。家里有小朋友咳嗽的，这招比吃药省心多了。
挑梨有个小窍门：看梨底部的“屁股”，凹进去越深的越甜。表皮摸起来稍微有点粗糙、带点小斑点的，往往比光滑漂亮的更好吃。
二、银耳：平民燕窝不是白叫的，出胶才是关键
银耳这东西，干货看起来干巴巴的不起眼，但泡发之后煮出胶来，黏黏糯糯的，喝一碗从嗓子润到胃里。它被叫做“平民燕窝”不是没道理的，滋阴润肺、生津止渴，秋天嘴唇干裂、皮肤起皮的人，连着喝几天银耳羹，自己都能感觉到变化。
很多人煮银耳不出胶，煮出来清汤寡水的，问题出在两步。第一步，泡发要够，冷水泡至少2小时，泡到银耳完全舒展开，像一朵大白花。第二步，撕得够碎，别用刀切，用手撕成小朵，越碎越容易出胶。煮的时候大火烧开，用勺子顺时针搅五六分钟，然后转小火慢炖40分钟，汤就变得浓稠挂勺了。搭配红枣、枸杞、黄冰糖，出锅前10分钟放进去就行，煮太久反而发酸。
秋分这天来一碗温热的银耳羹，比敷十张面膜都实在。
三、莲藕：秋天最补人的“水中人参”
“荷莲一身宝，秋藕最补人”，入秋之后鲜藕上市，口感脆嫩，营养也到了最好的时候。莲藕有意思的地方在于，生吃和熟吃完全是两码事。生藕性凉，榨汁喝能清火气、润咽喉，对付秋燥引起的嗓子发干特别管用；熟藕就温和了，健脾养胃，老人小孩都适合。
家常做法里，莲藕排骨汤是秋分餐桌上的经典。排骨焯水去浮沫，莲藕刮皮切滚刀块，加几片姜，一起丢进砂锅，大火烧开转小火慢炖一个半小时。炖出来的汤清甜不油腻，莲藕粉粉糯糯的，筷子一夹就断。喝完汤，浑身上下都暖了。
买莲藕的时候注意看两头：两头都封得严严实实的，里面才干净没泥。七孔的藕适合炖汤，粉糯；九孔的适合凉拌或清炒，脆爽。别买错了。
四、山药：脾胃弱的人，秋天就靠它了
山药看着普普通通，但它是秋分养生里“润物细无声”的角色。中医说它“色白入肺，味甘归脾”，既能润嗓子，又能养脾胃，补而不燥，不热不寒，属于怎么吃都不会出错的食材。
铁棍山药是秋天最值得买的品种，细细长长的，表皮有紫色锈斑的那种更甜。最简单的吃法是直接蒸——洗干净切段，上锅蒸20分钟，剥皮就能吃，粉粉糯糯的，带着自然的清甜，当早餐或者下午垫肚子都特别合适。讲究一点的话，蒸熟捣成泥，淋一勺蓝莓酱或者蜂蜜桂花酱，就是一道拿得出手的秋日甜品。
山药削皮的时候手容易痒，记得戴个一次性手套，或者削完赶紧用醋洗手，能缓解不少。
五、芋头：秋分餐桌上的“粉糯担当”
秋分吃芋头，很多地方都有这个讲究。芋头富含淀粉和矿物质，健脾补虚，而且它那个黏黏的汁液里含有黏液蛋白，对增强抵抗力有好处。关键是它便宜啊，几块钱买一大兜，蒸一锅全家都能吃。
小时候最深的记忆就是秋天奶奶煮一大锅芋头，剥了皮蘸酱油，简单粗暴但香得不行。现在花样多了，我最常做的是葱油芋头：芋头带皮煮15分钟，捞出来过凉水剥皮切块。锅里油热了放葱白，小火熬到葱白金黄酥脆捞出来，然后倒芋头进去翻炒，炒到表面微微焦黄，撒盐和葱花，翻匀出锅。葱油的香和芋头的粉糯混在一起，配米饭能吃两碗。
