越吃眼睛越亮的蔬菜｜隔天吃一次即可｜养肝护眼润脾胃，老少都精神

晚上吃饭时我在厨房切西葫芦，客厅里我家小儿子一边刷短视频一边揉眼睛，说眼睛发酸得像灌了沙子。媳妇在旁边拍他后背让他别揉，说你这一天光盯屏幕，肝火不旺才怪。正说着，老父亲也来一句，他最近看电视看久了就迎风流泪，还觉得胃口没以前稳，吃两口就想打哈欠。

我当场没跟他们讲大道理，先把饭端上桌。盘子里一份西葫芦炒肉丝，清清爽爽，肉丝滑嫩不柴，西葫芦细条炒到微微发软，脆里带点水润。家里人吃起来没负担，筷子夹得飞快。那天我媳妇也把手机放下了，说眼睛没那么干。她还补了句，别再光喊口号了，真要护眼还是得吃点对路的。

很多时候大家以为眼睛难受就该靠滴眼液，能缓一缓也行，但你要是天天对着手机、电视、空调，眼过度、肝火旺就会反复上来。老话说肝开窍于目，这不是玄乎，是中医讲的一个方向。肝脏不太顺，眼睛就容易干涩、视物模糊、迎风流泪。脾胃虚弱的人又容易浑身没精神，吃不下、气血跟不上，眼睛也就更难亮起来。

问题在于，很多人把护眼当成单点工程。滴一滴，撑几小时；再贴膜，再换个模式。可生活里屏幕照样离不远，空调风照样吹，晚饭照样简单应付。你越是靠临时手段，越容易把根子拖着走。真想让眼睛清亮有神，关键在于养肝健脾，把燥气稳住，把脾胃调顺，让身体不那么疲。

我做了这些年家常菜，越做越觉得护眼其实可以很实在。不是非得吃什么山珍海味，也不用天天滋补硬扛，家里常见三样菜，隔天换着来，刚好能把养肝润燥、健脾养胃这条线走通。

先说第一道西葫芦炒瘦肉丝，这菜看着普通，做对了很顶用。西葫芦不用削皮，洗净直接切成均匀细条，口感更齐整。猪瘦肉切丝，加少许生抽、淀粉，再加一点点食用油抓匀，腌制十分钟。这个步骤很关键，肉丝不容易炒老，水分也不容易跑光，入口就滑。

热锅少油下肉丝，火要快，滑炒到变色就盛出来。锅底留一点油，放蒜末爆香，然后下西葫芦大火翻炒到微微变软。再倒回肉丝，混合翻匀，加少许盐和轻生抽调味，继续翻炒入味就出锅。全程大火快炒，保住脆嫩的口感，也保住那股清润的味道。
