伏天更易出汗，西瓜绿豆暂且靠边站，多吃这3样既补钾增免疫又消暑解热

早上我爸在楼下买菜，眼睛一瞄就挑走一把芦笋，说这玩意儿现在便宜了，夏天吃正合适。回家我正准备给两个儿子做早饭，他们俩一边拿小板凳一边问我能不能做个带点新鲜味的菜。锅里水开那一刻，我把芦笋下进去烫1分钟捞出，后面再一翻炒，葱蒜香一上来，家里人就开始忙活着找筷子。那种感觉吧，像把夏天的风拧进了菜里，闻着就想吃，吃着也不腻。

我搞家庭生活打卡这几年，最怕的不是菜做失败，是做出来一盘端上桌，大家只吃两口就放那儿了。尤其夏天，天气热、胃口浮，菜得讲究三个事：清爽、快手、还得能把营养说清楚。今天这一套就是我最近家里常打卡的三道，芦笋炒口蘑、白灼秋葵、凉拌空心菜。你要是也在为夏天吃什么发愁，可以照着做，味道在碗里，省事也在手里。

先说芦笋炒口蘑。芦笋这东西，很多人以为就是配菜，其实它在夏天挺管用。它带点清脆的口感，焯烫时间短，水分不容易跑干，炒出来不老不柴。口蘑更省心，吸味快，配起来特别讨巧。关键是别把火开成烧烤店，芦笋最怕久炒，时间一长就容易出水，口感也塌。

我做法很简单，锅中水烧开，加少许油和盐，芦笋下锅烫1分钟，捞出备用。这里加一点油和盐是为了保持颜色和底味，不用太复杂。接着锅里油热，下葱蒜翻炒爆香，再下入口蘑，中火翻炒1分钟。这个时候别急着下芦笋，口蘑得先把水气炒散一点，后面和芦笋一起翻，才不容易寡淡。

芦笋下锅以后就要快，快速翻炒，火别太大也别炒太久。等它们混匀以后撒入黑胡椒盐、蚝油、生抽，翻炒入味，最后撒葱花就出锅。你要是问我为什么我家特别爱这道，我告诉你三个点：芦笋清爽不糊嘴、口蘑吃起来肉感更足、黑胡椒盐一撒，香气立起来，孩子也愿意夹。

讲到这里得说个现实问题，很多人夏天做菜总想省事，直接把芦笋和蔬菜一起炒很久。结果是什么，芦笋发软出水，颜色也暗下来。你想想，夏天吃饭本来就没那么有胃口，菜再一塌，谁都吃不下。家庭做饭就是这样，热闹不能靠硬撑，讲究得落到火候和时间上。

再上白灼秋葵。秋葵我家从去年开始就常买，尤其是孩子吃得多。秋葵这种菜看着黏糊糊，其实它主要是里面的黏性物质，做得对就不腻，做得不对就容易让人觉得怪。白灼是最稳的做法，不用油锅翻炸，不用复杂腌制，吃的就是原味加酱汁。

秋葵清洗干净，锅中水烧开，加入少量油和盐，放入秋葵焯水3到4分钟，捞出装盘。焯水时间我卡得很死，超过4分钟口感就容易软塌，孩子咬起来会觉得绵。捞出来不要放太久，热乎的时候淋酱最合适。酱汁我是碗里直接调，蒜末、白芝麻、橄榄油2勺、生抽2勺、苹果醋1勺、香油1勺、盐适量，搅拌均匀。

淋在秋葵上就行了。蒜末的辛香先到，白芝麻的香气紧跟着，苹果醋让味道更亮，香油最后收口。你要是担心孩子不爱醋，就把苹果醋减半，其他不动，味道也能成立。秋葵配蒜末这套在家很受欢迎，我爸妈吃的时候喜欢蘸一蘸，两个儿子直接用筷子夹着吃，吃完还要问有没有第二盘。

说句老实话，很多人对秋葵有刻板印象，觉得是减脂菜，吃得很克制。可家庭饭桌不是健身打卡，它要让人舒服。秋葵这道菜，配上米饭和主食以后也不冲，清清爽爽，正好把油腻感压下去。夏天桌上再有一盘汤或一盘肉，就能形成一个平衡。

最后是凉拌空心菜。空心菜也叫通菜，山东人夏天吃得不少，尤其是蒜蓉那种味道一来，饭就容易多吃一碗。空心菜这菜火候更关键，因为它叶子嫩，焯水时间长了就会老，口感发柴。再加上凉拌讲究的就是热油激香和调味比例，调不准就会寡淡或者太辣太酸。

我用的食材是通菜、蒜蓉、小米辣、白芝麻、辣椒面、生抽2匙、陈醋1匙、蚝油1匙、盐、油。碗中先放入蒜蓉、小米辣、白芝麻、辣椒面，淋上热油激发出香味。热油一浇，辣椒面和蒜蓉的香气就像在屋里放了个小音响，啪一下就响。然后加生抽2匙、陈醋1匙、蚝油1匙，搅拌均匀，调成酱汁备用。

炒锅不需要复杂步骤，锅里水开后加少许盐和油，把通菜焯水20秒，迅速捞出。时间就二十秒，别看它在水里“安安静静”，一眨眼就老了。捞出以后趁热把酱汁淋上去，翻拌均匀就能上桌。这样做出来的通菜，吃起来脆、带蒜香和辣香，酸味不压主味，老人和孩子都能接受。
