看我晒了好几年早餐的朋友会发现，最近几年经常会做一些蛋糕，面包之类当早餐的主食，但是我家的老公长了个中国胃，最爱的还是中式的早餐，比如各种包子，油饼之类。这次就来分享一款他最近吃的包子的做法。梅干菜（又名霉干菜）是一道江南地区（特别是绍兴地区和金华地区）及客家地区常见的汉族传统名菜。有芥菜干、油菜干、白菜干、雪里蕻干之别，多系居家自制，使菜叶晾干、堆黄，然后加盐腌制，最后晒干装装坛。油光黄黑，香味扑鼻，解暑热，洁脏腑，消积食，治咳嗽，生津开胃。
梅干菜烧肉，梅干菜扣肉等又是其经典的菜式。做为主食的梅干菜肉包，同样的也非常的受欢迎。个人感觉经过炒制的内馅，梅干菜和肉的味道充分融合，会让包子更美味，在炒制的过程中，可以加入适量水慢慢卤，收汁时不要收的太干，适量的汁水，会让包子内馅更好吃。同时用这个内馅拌饭，拌面都同样美味。
内馅原料：
肉糜、梅干菜、香葱、生姜、料酒、盐、老抽、白糖。
面皮原料：
中筋面粉250克、水130克、酵母3克。
做法：
1、原料备用。
2、梅干菜捡去老梗，泡开后充分清洗干净。
3、挤干水份后，剁碎。
4、油锅烧热，下入肉糜。
5、炒散后，下入葱姜末。
6、搅拌均匀后，倒入料酒。
7、倒入少量的老抽，白糖和适量的水，开后倒入梅干菜末。
8、小火慢卤至充分入味后，调入适量的盐，放凉备用。
9、面皮原料倒入大容器中，揉成均匀的面团。
10、面团盖保鲜膜，放在温暖处，发酵至两倍以上大小。
11、分成均匀的小剂子。
12、擀圆后，在中间放上适量的内馅。
13、捏上均匀的小褶子，即成包子坯。
14、均匀的摆入铺了油纸的蒸笼内。
15、放在笼内二次发酵十五分钟左右。
16、冷水上锅蒸十五分钟左右，蒸好后停火焖三分钟再揭盖。
