第一步:把鸡翅正反面各划上几刀,便于入味。锅内烧水,冷水放入鸡翅,加入料酒去腥,大火烧开后撇去浮沫,再煮一分钟捞出控水备用。

第二步:碗中打入两个鸡蛋,搅拌均匀。接着把鸡翅放进蛋液里面裹匀。

第三步:在鸡翅上面撒上一层干淀粉,用手抓拌均匀,使每一块鸡翅都能裹上淀粉。

第四步:起锅烧油,油温五成热时下入鸡翅,保持中小火慢慢炸制。鸡翅表面金黄酥脆就可以出锅了。

第五步:锅内留少许底油,放入葱姜蒜炒出香味,然后加入两大勺自制的椒盐粉,翻炒均匀。接下来倒入炸好的鸡翅,快速翻炒几下,让鸡翅均匀地裹上调料,就可以出锅装盘啦!

第二步:锅内不放油,把打好的香料倒进去,小火慢慢炒至颜色变深,闻起来特别香的时候就可以了,然后盛出晾凉,再放进干净无水的容器保存好。
