制作步骤:

1.排骨浸泡2小时,换水3次,泡干净血水,洗干净。排骨冷水下锅,加入1勺料酒、几片姜片,大火煮开。水开后,将血沫撇干净。焯水5分钟后,捞出排骨,用温水冲洗干净,沥干水分。

2.锅中倒入少许食用油,油热后,放入沥干水分的排骨,小火慢煎。不断翻面,让排骨受热均匀,煎至表面金黄,锁住肉汁。煎好的排骨盛出,备用。

3.在碗中依次加入2勺料酒、3勺生抽、4勺香醋、5勺白糖、小半勺盐,搅拌均匀,酸甜可口的酱汁就调配好了。再准备一大勺淀粉,加入2大勺清水,调成水淀粉。

4.锅中留少许底油,放入葱姜蒜末,爆香。倒入煎好的排骨,翻炒几下。接着倒入调配好的酱汁,炒匀,让每一块排骨都裹满酱汁。加入适量清水,没过排骨,大火煮开后,转小火炖煮15-20分钟.

5.排骨充分吸收酱汁的味道,开盖,倒入水淀粉勾芡,汤汁变得浓稠。大火收汁,撒上少许白芝麻,翻炒均匀,即可出锅装盘。
