第三步:

沿着锅边烹入2勺料酒,大火快速翻炒,酒气蒸发,带走肉腥味。接着加入3勺生抽提鲜,1大勺老抽上色,翻炒均匀,让肉块的颜色更加红润诱人。加入足量的开水,没过五花肉3厘米。大火烧开后,转成小火,盖上锅盖,炖煮50分钟。
第五步:
等五花肉炖到用筷子能比较轻松地戳进去,鹌鹑蛋放进去。用勺子轻轻推动,让鹌鹑蛋也浸在汤汁里。盖上锅盖,继续小火炖煮20-30分钟。肉烂蛋香,汤汁变得有些浓稠。尝一下咸淡,加入适量的盐调味。转大火开始收汁,不停翻动,汤汁变得浓稠红亮,关火出锅啦!别收得太干,留点汤汁拌米饭,那滋味,简直了!
